Peanut Butter Fudge Squares

 

PEANUT BUTTER FUDGE SQUARES
~~Gluten Free~~Low Carb

Yield: 16 squares
Serving Size: 1 square

Ingredients:
Chocolate Fudge:
1-1/2 sticks butter
4 oz. unsweetened chocolate
1/4 cup organic cacao powder*
3/4 cup Confectioners Swerve sweetener*
1/2 tsp Pure Vanilla*
5 large eggs

Peanut Butter Fudge:
3/4 cup peanut butter
3/4 stick butter
1/2 tsp Pure Vanilla*
1/4 tsp salt
3/4 cup Confectioners Swerve sweetener*

Chocolate Drizzle:
1 oz. high % cacao chocolate*

Directions:
Chocolate Fudge:
Preheat oven to 325ºF and line an 8×8 inch baking pan with parchment paper, with overhanging edges (this makes it easier to remove from pan after baking).
Melt butter, chocolate and cacao powder together in a medium saucepan, while using a wire wisk to stir until smooth.
Stir in the Swerve and Pure Vanilla extract.
Let cool for about 5 minutes.
Whisk in eggs, one at a time, until well combined.
Pour mixture into the prepared pan.
Bake for 20 minutes, until just barely set and middle still looks uncooked. Just make sure it’s not “wobbly” anymore. Do not overbake, since it will make it too dry. The edges will rise a little higher but should recede a bit as it cools.
Let cool in pan for about 20 minutes.

Peanut Butter Fudge:
In a small saucepan over medium heat melt together peanut butter and butter, using a wire whisk.
Stir in the Swerve, a little at a time, until mixture thickens.
Spread over the cooled chocolate fudge and refrigerate for about 3 hours.

Chocolate Drizzle:
In a small, microwave safe bowl melt chocolate by heating in microwave in 30 second increments.
Stir until smooth.
Drizzle over peanut butter fudge.

Return to refrigerator for about 5 minutes.
Lift the entire fudge out of the pan by the edges of the parchment.
Cut into 2-inch squares.

Each serving (1 square) has:
5g Carbohydrates, 2g Fiber (Total Net Carbs = 3g)
